Wild Mushrooms
White sweet-clover crème brûlée
(4 portions)
Ingredients:
- 2 cups of 35% cream
- 2 teaspoons of white sweet-clover tea
- 200 ml of maple syrup
- 5 egg yolks
Preparation: Before starting, preheat the oven at 350°F and prepare a bain marie
Step 1: In a pot, warm up the cream and white sweet-clover tea. Once it is warm, turn off the heat and allow to sit 15 minutes
Step 2:
- Beat the eggs and maple syrup until well blended
- With a sieve, add the cream and stir well
- Leave in the refrigerator until the small bubbles have disappeared
- Fill 4 ramekins with the mixture and put them in a baking dish. To avoid spills, put the dish on the oven rack before filling it with hot water
- Bake until the cream doesn’t look liquid anymore
- Take out of the oven and cool completely
- When ready to serve, top with a thin layer of sugar and melt it using a torch
- Add a few drops of Amer Kebek Wild Mushrooms
