Creme Brulee Recipe

White sweet-clover crème brûlée

(4 portions)
Ingredients:
  • 2 cups of 35% cream
  • 2 teaspoons of white sweet-clover tea
  • 200 ml of maple syrup
  • 5 egg yolks

Preparation: Before starting, preheat the oven at 350°F and prepare a bain marie

Step 1: In a pot, warm up the cream and white sweet-clover tea. Once it is warm, turn off the heat and allow to sit 15 minutes

Step 2:
  1. Beat the eggs and maple syrup until well blended
  2. With a sieve, add the cream and stir well
  3. Leave in the refrigerator until the small bubbles have disappeared
  4. Fill 4 ramekins with the mixture and put them in a baking dish. To avoid spills, put the dish on the oven rack before filling it with hot water
  5. Bake until the cream doesn’t look liquid anymore
  6. Take out of the oven and cool completely
  7. When ready to serve, top with a thin layer of sugar and melt it using a torch
  8. Add a few drops of Amer Kebek Wild Mushrooms
Cookie Recipe

Wild mushroom and Walnut cookies

Ingredients:
  • 2 teaspoons of dehydrated wild mushroom powder
  • 1 1/4 cup of flour
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 1/2 cup of butter, at room temperature
  • 1/4 cup of brown sugar
  • 1/4 cup of icing sugar
  • 2 egg yolks
  • 1/2 cup of oat milk
  • 1/2 cup of dark chocolate chips
  • 1/4 cup of roasted almonds

Preparation: Before starting, preheat the oven at 350°F
  1. In a bowl, mix the wild mushroom powder, flour, baking powder and salt
  2. Reserve
  3. In the bowl of the food processor, cream the butter with the brown sugar and icing sugar
  4. Add the egg yolks and oat milk, and mix well
  5. Add the dry ingredients, the chocolate chips and the roasted almonds
  6. Shape the dough into cookies and put them on a baking sheet
  7. Bake for 15 minutes
  8. Remove from the oven
  9. Add a few drops of Amer Kebek Walnut
  10. Cool completely and serve
Chaga Laque Recipe

Chaga Laque

Ingredients:
  • ½ cup of Chaga decoction
  • ½ cup of maple syrup
  • ¼ cup of sherry (or maple) vinegar

Chaga decoction: The Chaga decoction is an immune system “booster.” Its slightly bitter taste evokes coffee

Ingredients for the decoction:
  • 14 g of Chaga
  • 1 litre of water

Preparation of the decoction:
  1. Add 14 g of Chaga per litre of water
  2. Warm over very low heat for at least two hours
  3. Strain

Preparation of the laque:
  1. Simmer over low hear the decoction, the maple syrup and the vinegar until it reaches the consistency of maple syrup
  2. Add 15 ml of Amer Kebek Walnut
Butter Recipe

Beurre travaillé

Ingredients:
  • 1/4 lb of beurre pommade
  • 1.5 black garlic clove
  • 1 dry shallot, chopped
  • 15 ml or 3 teaspoons of Amer Kebek Forest
  • 1 tablespoon of chopped balsam fir needles
  • 1 tablespoon of butter for the shallot

Preparation:
  1. Mix the black garlic and beurre pommade in the food processor
  2. In a pan, melt the butter and add the shallot
  3. Cook slightly and add the fir needles, just enough to bring out the flavours
  4. Deglaze with Amer Kebek Forest and immediately remove from heat
  5. Cool completely then blend with the beurre pommade
  6. Roll into a log shape in plastic wrap and refrigerate
  7. Cut into portions with a warm knife
