Spring Cocktail

SPRING

Black Walnut

Name: Pan-Pan
Recipe
1.5 oz of gin (Citrus type)
1.5 oz of organic carrot juice
0.75 oz of honey
0.25 oz of verjuice juice (or 0.5 oz freshly squeezed lemon juice)
5 sage leaves
5 drops of Amer Kebek’s “Black Walnut”

Glass: Marie-Antoinette

Decoration: Sage leaf

Method
Shake with ice and taped sage leaves, double strain and pour the drink in a glass with ice.


Flowers

Name: Happy Spring
Recipe
1.25 oz of gin (herbaceous type)
1.5 oz oat milk
1.25 oz of maple syrup
0.5 oz of verjuice juice (or 0.75 oz freshly squeezed lemon juice)
4 oz elderflower tonic water
5 drops of Amer Kebek’s “Flowers”

Glass: Highball

Method
Dry shake (without ice) all the ingredients except the soda. Add ice and shake again. Double strain and pour the drink in a glass. Top up with soda and fresh ice.

Wild Mushrooms

Name: The Tracker
Recipe
1.5 oz of gin (herbaceous type)
1 oz of honey
0.5 oz apple cider vinegar
4 drops of Amer Kebek’s “Wild Mushrooms”
Extend with sparkling water

Glass: Highball

Method
Dry shake (without ice) all the ingredients except the sparkling. Add ice and shake again. Double strain and pour the drink in a glass. Top up with soda and fresh ice.

Forest

Name: Fresh Breeze
Recipe
1 oz of gin (your choice)
1 oz Lily Wintergreen Liqueur
0.75 oz of maple syrup
0.5 oz of verjuice (or 0.75 oz freshly squeezed lemon juice)
3 fresh sage leaves
5 drops of Amer Kebek’s “Forest”
* Absinthe “Flamber” (glass rinse)

Glass: Coupette or Marie-Antoinette + balloon glass (for flaming)

Method
“Flamber” your absinthe in the glass, shake vigorously, double strain and pour the drink in the glass.

Summer Cocktail

Name: The Roast
Recipe
1.5 oz of gin (spicy type)
1 oz of honey
3 tablespoons of sweet corn kernels (cooked)
2 drops of sweet clover extract (or vanilla)
0.25 oz of verjuice (or 0.5 oz freshly squeezed lemon juice)
1 egg white
4 drops of Amer kebek’s “Black Walnut”

Glass: Coupette

Method
Shake vigorously with ice, double strain and pour the drink in a glass.
 

Flowers

Name: Lady In Red
Recipe
1.5 oz of whiskey
0.5 oz red apple vermouth
0.5 oz elderberry juice
0.25 oz of honey
4 drops of Amer Kebek’s “Flowers”

Decoration: apple slices with ground Nard of pines (or cinnamon)

Glass: Coupette

Method
Shake all the ingredients. Double strain and pour the drink in a glass.

Wild Mushrooms

Name: Surprised Smurf
Recipe
1.25 oz spiced rum
1 oz of apple cider vinegar
1.5 oz of freshly squeezed apple juice
1 egg white
3 drops of Amer Kebek’s “Wild Mushrooms”

Glass: Coupette

Optional: Smoked in kindling

Method
Smoke your glass using a board. Shake vigorously all the ingredients. Double strain and pour the drink in a glass.

Name: Maya
Recipe
1.25 oz of gin (floral type)
1 oz of honey
0.25 oz of verjuice (or 0.5 oz freshly squeezed lemon)
4 drops of Amer Kebek’s “Forest”
Extend with sparkling wine (A natural sparkling wine)

Decoration: Rosebud

Glass: Flute

Method
Shake all the ingredients except the sparkling. Double strain and pour the drink in a glass. Top up with sparkling.

Recipe
1.25 oz of Lagavulin 16
0.75 oz of wild blueberry juice
0.75 oz of maple syrup
0.5 oz of verjuice (or 0.75 oz freshly squeezed lemon)
2 egg whites
4 drops of Amer Kebek’s “Black Walnut”
Applewood smoked

Glass: Coupette

Method
Smoke your glass using a board. Dry shake (without ice) vigorously all the ingredients except the sparkling water. Add ice and shake again. Double strain and pour the drink in a glass.

Name: It’s A Punch!
Recipe
1.25 oz Rye Sugar Shack
0.5 concord grape juice
1 oz of maple syrup
0.25 oz of verjuice (or 0.5 oz freshly squeezed lemon)
3 basil leaves
5 drops of Amer Kebek’s “Flowers”
Extend with soda

Glass: Highball

Method
Shake vigorously all the ingredients. Double strain and pour the drink in a glass.

0.5 oz of pumpkin juice
4 drops of Amer Kebek’s “Wild Mushrooms”

Method
Shake all the ingredients. Double strain and pour the drink in a glass. Serve on a big ice cube.

* To make this cocktail make sure you have kindling, a torch and a plank. (Or a smoking gun)

1 quarter of a honey crisp apple, cubed

Recipe
1.5 oz of gin (spicy type)
0.5 oz of red port
0.75 oz of maple syrup
5 drops of Amer Kebek’s “Flowers”
Big ice cube

Glass: “Old Fashioned”

Technique: Smoke the glass with a cigar (or kindling).

Method
Stir with ice using a mixing glass then strain and pour the drink in a glass. Serve on a big ice cube.

Wild Mushrooms

1.5 oz of Gin (boreal type)
1.5 oz maple syrup
1 oz of verjuice (or 1.25 oz freshly squeezed lemon)
1 egg white
1 oz 35% cream
4 drops of Amer Kebek’s “Wild Mushrooms”
1 oz of soda

Glass: Highball (fizz)

Method
Dry shake (without ice) vigorously all the ingredients except the soda. Add ice and shake again. Double strain and pour the drink in a glass. Top up with soda.
